Catania sits at the foot of Mt. Etna and has a whimsical fountain decorated with elephants. This chocolate bar features prickly pear peels & marjoram. The smell and taste of this chocolate is sweetly herbal, so much so that it’s positively perfumed. Dulcid green and floral notes fill the nose and mouth. This one is my favorite!
Palermo is the capital of Sicily and is replete with ancient beauty: cathedral, Royal tombs, palace, mosaics. This Palermo bar is made with mandarin peels and sumac. These flavors are the most understated of the quad, as I only got citrusy hints (mostly the sumac- a tart spice) on the finish. Even though mandarin is not forward, the chocolate is a pleasant fruity experience without any aggressive sourness, which tells me it is well made as it seems (deceptively) simple and smooth.
I’ve tasted Sicily but I still need to go see it someday!
