More birthday Chocolate! My friend @rachel_bergman83 was in Sicily a few weeks ago and kindly brought back four of these bars to try made by @ilgiornocheforsenonesiste Each bar is named and flavored for a city in Sicily. Isn’t the artwork on these packages gorgeous?
All the bars are 60% dark made with Ecuadorian Nacional chocolate. All are made in the Sicilian Modica style meaning cold processed and rustic texture: crunchiness from the sugar granules and a softness to the chocolate. People have different opinions about this texture but personally I enjoy the sensoriness.
Agrigento: known for its many famous ancient ruins of Greek temples, this chocolate features Extra Virgin Olive Oil and dried Bay Leaves:
You can smell the bay in the nose, but also a fruitiness to the chocolate, and maybe hints of lime?
The Bay is subtle, it blends seamlessly with the olive and the fine Ecuador chocolate to create a rustic yet fragrant and elevated experience.
Taormina: known for an ancient Greco-Roman theater still in use today, this chocolate is made with mulberries and lesser calamint (an herb in the mint family). The mint is the most forward flavor, but not overwhelming or ‘toothpasty’. The mulberries are a quiet support under the mint, lingering on the finish with a few chewy dried fruit bits. A lovely pairing.
