Amazonian Dark 70% with Tucupi by @luisaabram
This bar showcases incredible unique and interesting flavors of the Amazon. Tucupi is a traditional Amazonian sauce made from the fermented juice of wild cassava. It adds incredible bursts of umami flavor to the chocolate, reminiscent of the complexity of miso.
The base chocolate used is 70% dark from Rio Tocantins, (beans from the Tocantins river system in the Amazon) and the nose of this bar is incredibly earthy and bold, malty and almost animalic.
The chocolate packs a citrusy punch right off the bat. Then… 💥💥💥
The tucupi flavor emerges like a rocket blasting off, careening through ever morphing presentations, sweet, sour, umami, salty, sour again! It lingers as the chocolate melts away, leaving a robust umami tartness. Your mouth waters and you want to go again!
