I’m comparing two single origin dark chocolates from Vietnam for this week’s #tttt_v
Ben Tre- these beans come from an alluvial valley in the south of the country and display a soft fruitiness. The flavor opens to woodiness, then gentle fruit notes. My mouth waters long after the chocolate has melted away- reminiscent of the mouthwatering, enzymatic quality of kiwis.
Dong Nai- these beans come from a hillier area further north and grow in areas with other commodity crops (coffee & cashew). A floral and raisiny nose open up to COFFEE coming roaring through! The first few times I tried this bar I had to check the wrapper to make sure I hadn’t missed news of inclusion ingredients- the coffee notes are THAT strong!
I love to use this bar in tastings to showcase how much a character a single origin can have.
I haven’t yet tried Belvie’s other bars yet but someday I want to try them all side by side! Remember there is not just one flavor profile to a country’s cacao.
