2022: Lovely Nose that is a symphony of balanced flavors, mild and pleasant. Bolivia has been my favorite Chocolate origin because I’ve found it often has the most interesting balance of fruity and earthy flavors.
After the Nose the taste follows that path of mild balance, with gentle earthiness, marshmallow notes and hints of coffee.

2023: the Nose is immediately more earthy and fermented, almost barnyardy. The earthy tastes are stronger in this one, and the marshmallow more muted. This year’s bar has a more aggressive personality, and I like it! 😉
