It’s so interesting and fun to see the explosion of cacao fruit as a distinct flavor/inclusion into craft chocolate over the last few years.
The interesting thing about this bar is that it showcases the parts of chocolate that we normally don’t taste front and center: the creamy fatty cocoa butter, and the tropical pulpy fruit surrounding the bean…
That dark earthy taste that we know so well has been taken out of the equation and we are invited to taste a completely different side of the cacao pod.
The tropical flavors begin to unfold as soon as the cocoa butter melts: banana, and then mango, with dancing hints of lemonade.
A perfect treat for these hot days of summer!
