So exciting to join in the Grand Opening for @cocoalegato on Saturday! It’s a new bean-to-bar chocolate shop in North Seattle (Greenwood neighborhood) that blends house-made chocolate with music.
There’s a little stage in the cafe for live performances, and the factory/kitchen portion is visible through a glass wall. Music and chocolate iconography are creatively blended throughout the design of the store. It’s obvious so much careful thought was put into the whole design (Legato is a music dynamic that means “smooth”).
Head chocolate maker Aaron has a long history in the Seattle chocolate scene, including previously working at Theo and Spinnakers. The current lineup of bars includes darks ranging from 70%-80%; with plain single origin to salt to nibs to coffee inclusions.
Beans are sourced from Columbia (through Cacaitos) and Peru (through Cacao Life).
I’ll post reviews of a few bars soon, but samples were good and I can for sure attest to the quality their cookies, which came fresh from the oven and were baked perfectly. I will definitely be back to try their grilled cheese & chocolate sandwich!
I’m always impressed by the volume and quality of small chocolate makers in Seattle, so I’m very happy to see Cocoa Legato join the talented pool (ironically at the same time we’re losing Intrigue Chocolate to the Midwest).
