Let’s delve into some of my newly acquired New Zealand Chocolate!
It’s important to keep one’s immune system up during winter, and what better hipster way to do that than with functional mushrooms?! 🍄
Here we have Coconut Milk Chocolate infused with mushrooms (lion’s mane, reishi and chaga) from @halfbakedcateringco In Wellington. The cacao beans are also single origin from the Solomon Islands! That’s a new one for me but can’t taste any terrior due to all the inclusions.
The chocolate has an immediate creamy mouthful with strong coconut notes. As the chocolate continues to melt you feel the gentle earthy presence of the mushrooms. As the chocolate fades away the mushrooms leave an herbal-y bitterness on the end of the palate. The sunny sweetness balances well with the earthy bitterness in this bar.
