Naive Cola 65% Domantas from @chocolatenaive loves playing with flavors, and I love tasting his experiments! This bar is his attempt to reimagine the ‘original’ Coke recipe into a chocolate bar. I chatted with Domantas at the SF CCE Festival about this bar- it’s a fun experiment and he’s interested in people’s reception of it.
The nose is so playful and complex: I get nutmeg, anise, orange, and herbaceous hints. There’s an effervescence to it- but maybe it’s because I’m so used to associating cola flavors with carbonation?? Is it all in my head?! 😆
The chocolate is a bit soft, perhaps from all the extra additions (essential oils??), but the softness provides the perfect cushion for the symphony of flavors, as well as the little bits of popping candy inclusions that so appropriately round out the cola experience.
The nose profile expands on the tongue, unfolding with delightfully mysterious citrus (lemon, orange) and spiced flavors. It’s so tricky to try and piece out individual flavors in such a classic and familiar cultural food like cola. We’re so used to tasting that combination of flavors together, in our mind it tends to mentally blend into one flavor. Do I taste a hint of anise? Mint?? Lemon and orange are present. Nutmeg seems to be the main star for me in the finish; it’s not specifically listed in the ingredients but it’s a well-known part of historic cola recipes. Cola nut, also historical, IS a part of this bar. Cola nut was originally the source of caffeine for original Coke, but I wonder if it imparts any specific flavor that we wouldn’t necessarily recognize on its own.
Overall, I LOVE this bar! It’s so fun to have classic favorites combined and reimagined in new ways. Tasting this bar is both comforting, invigorating, and challenging, as the brain encounters old favorite flavors in new settings. Keep up the fun experiments Domantas!
