This Hojicha bar was my first exposure to roasted tea in chocolate, and you never forget your first love.

Usually this bar is limited to the Fukuoka location of @greenbeantobar_chocolate boutiques, so I’ve picked these up at @nwchocolate Festival the last two years.
When I first tried this bar last year- the most amazing note shouted to me: MUSHROOMS! It was gently earthy and roasty in the most delightful way, as I’ve recognized roasted tea bars to be in general. The dark milk Palo Blanco from Peru seems the perfect carrier for this intriguing earthy flavor.

This year’s bar is very different- much more than I would have guessed! The nose is very similar to last year’s with that roasty tea note. However the chocolate immediately hits different on the palate: instead of that smooth mushroom note, there are immediate coffee notes. They mellow into a caramel sweetness while still retaining that roasty quality. The finish whispers hints of dried fruits and then fades into a pleasant mild bitterness.

How different they are! So fascinating! I think 2022’s ‘mushroomy’ hojicha is still my favorite. I’d love to hear if you’ve come across other ‘mushroomy’ single origin bars! 👇
