Lavender & Maple 70% in Philippines Bon Bulak by @theorganichouse.ca
I think it’s an interesting idea to put flavor inclusions into a single origin chocolate. Will the flavors compete? Will nuanced notes get drowned out? But for Organic House, smooth is the name of the game, both in texture and flavor.
Before tasting, you smell the hint of lavender but also a melodic smoothness from the beans, hinting at further complexity which begins to unfold as it melts in your mouth. The Filipino Bon Bulak beans must have a significant earthiness to them because you do taste the slightest hint of gentle mushrooms and wood mingled with the lavender’s piney floral notes. The maple is in the backseat, letting the Bon Bulak beans shine accented by the lavender.
If you’re a big fan of maple you might be a little disappointed by its shyness here, but I think overall it’s a lovely bar.
