Summer always reminds me of my time living in Scandinavia (Denmark) and how glorious the summers are there. I love that Fjåk often features local Scandinavian flavors in their chocolate.
If you’ve spent any time in Germany or Scandinavian you know that licorice is a big thing, and salted licorice is a thing within that thing! I must admit my first experience with salted licorice is not a happy memory.
But Fjåk fixed that for me! This bar is a perfect gentle blend of this distinctive flavor profile. At first the dominant taste is a lovely creamy milk chocolate. The licorice root sneaks up on you! It grows as the finish develops, but remains a smooth, balanced fennel flavor instead of what might come to mind when you think “Norwegian black licorice”. It’s not aggressive, rather perfectly balanced with the sweet milk chocolate and hint of salt.
