Limoncillo (Lemongrass) 64% for today’s #tttt_l by @cacaohunters
Cacao Hunters is one of my new favorite makers! They are an at-Origin maker of Colombian cacao that achieves impressive smoothness of flavor.
This bar uses Tumaco cacao for a base with a subtle addition of lemongrass.
Powerful nose of sharp herbalness but also strong earthiness. Smells “darker” than a 64%, but just wait for it!
Upon tasting I find cherry juice in my mouth! This bar is the total opposite of dry- mouthwatering and very silky mouthfeel. The lemongrass is a subtle inclusion that lets the beans shine first before taking the stage. Despite how sharp and powerful lemongrass could be, it’s not aggressive; coming in late and lingering more on the finish.
This is a wonderful example of how to skillfully add an inclusion to a single origin without subverting the terroir of the beans.
