Maya Mountain Belize 72% Dark by Native Bean


I was so excited to discover a new small craft chocolate maker at the Provo Farmer’s Market yesterday! Native Bean @nativebean makes all their chocolate in Springville, UT (home produced).

I tried their Maya Mountain Belize 72% dark bar. There’s a strong nose of dried cherries supported by smokey tannins.

The bite is creamy and toothsome. The immediate profile mirrors the nose: strong tart dried fruit contrasting with rich smokey tobacco and tannins. The finish is sour/astringent, making me reach for a drink of water. I would love to see that astringency mellowed a little, but otherwise I am impressed with the strong character of this bar.
