This chocolate originating from São Tomé & Principe is extra fermented, giving a signature earthy, almost barnyardy taste that reminds one what it’s like to be alive. The form of the chocolate, with its many small thin plates, adds to this overall rustic effect. The peppercorns have been well chosen and give of strong floral notes, but don’t let that lull you into security, they come back for a strong and enduring kick, competing handily with the chocolate’s fermented notes. The salt takes a back seat; I almost wish it were stronger as the pepper dominates the finish. This chocolate is not for the faint of heart!
