Here’s a bar from Chocolate Festival that I keep reaching for: Raspberry (55% white chocolate) from @theorganichouse.ca . It’s so fresh and tart! This is NOT your typical sweet white chocolate. I like sour things so it’s great for me, although it was a bit too tart for my husband and friend. I think the balance of tart and sweet is perfect.

Interesting thing about Organic House is that they use alternative sweeteners in their bars that are low glycemic: coconut flower nectar (not the same as coconut palm sugar). The sweetness of the bar does have a bit of that “light & airy” quality that alternative natural sweeteners can have (like monk fruit) without the off aftertaste of ones like xylitol.
