70% San Martín Peru by @marana_chocolate
This chocolate has an incredibly aromatic nose- fruity like chocolate dried cherries, with hints of floral and woody notes.
The chocolate texture is softer and lighter than a typical 70%, it melts easily in the mouth.
The taste opens up slowly with hints of coffee.
Soft, pleasant tannins open up suddenly, they’re persistent but not completely domineering. The experience in the mouth is much darker and woodier than the nose would suggest! The finish is earthy and a bit astringent with hints of spices and a very woody finish.
What an interesting chocolate! One of the most unique single origin experiences I’ve had in awhile. Got it at @xocolatebar Oakland, CA.
