This is one of the most controversial bars I’ve eaten in awhile. It won some awards for New Zealand Chocolate in 2022, but personally I had a different experience with it…
Their aim with this bar was to “develop deeper flavor notes while suppressing the lighter, fruitier ones” by using a dark roast.
Well, let me just say you get the first hints of burnt in the nose.
Unfortunately the chocolatier’s creative efforts to “push the roasting to the brink of dark”, in my mind, accidentally veered full on into total darkness. An overpowering bitterness and burnt notes hulk over hints of fruitiness in the opening. Despite the long conche there is a dominant astringency throughout.
I admire the chocolate makers efforts and presentation but I do not enjoy this bar, I believe it is fully over roasted. As a 72% dark bar it tastes more like 85% dark. Most of my friends also felt it tasted burnt, but if you’re interested I will mail you the rest of the bar and you can see for yourself! 😆
