Uganda 78% “Silk” by @bisouchocolate
Nose reminds me of other Uganda cocoas I’ve had before. There’s hints of dark roasted coffee blended with floral notes.
The chocolate is quite soft for 78%. There are strong notes of coconut, so much that in a blind test one might think this was a vegan coconut milk chocolate.
The profile on the tongue is quite subdued and sweet. The sweetness has a cool quality to it, almost reminiscent of the cooling sensation of sugar-free sweetener, though this chocolate is made with real sugar. Beyond the initial coconut and pleasant sweet notes, there are gentle hints of fruit and flowers, though the profile overall seems blunted. It is extremely smooth, hence its “silk” nickname. This chocolate leaves me asking questions, unsure if there’s more hiding behind my reach. However, this would be great a dark chocolate to give to someone who “doesn’t like dark chocolate”. Its smoothness and sweetness is very impressive for a 78%!
