Another delightful bar from last NW Chocolate Festival! @wildwoodchocolate formerly The Chocolate Maker’s Studio, has been making bars filled with luscious caramel for years. I buy from them every NW Chocolate Festival, and they’ve rebranded as Wildwood Chocolate with the same great interesting flavors and gorgeous new molds.

I usually buy one of their Rosemary caramel bars, so to shake it up this year I got Fennel Pollen Caramel. Their caramel is so sumptuous- it’s not runny, but so toothsome and chewy without being difficult to navigate. The fennel hints are very subtle; the whole thing is delightful.
